Lisa requested the recipe for the Peter Paul Mound Cake. If you love chocolate and coconut this cake is perfect. Be forewarned it is very RICH!
Also I would like to poll everyone. What is your must have tool in the kitchen? I'm trying to think of a gift for my sister-in-law (who doesn't cook much) to encourage her to cook more.
Peter Paul Mound Cake
Cake:
1 box of chocolate cake mix
Mix cake according to box directions. Bake in 2 9” round cake pans.
Filling:
1 c sugar
1 c heavy whipping cream
2 7oz cans of coconut flakes
1 t vanilla
20 marshmallows
Cook sugar and whipping cream until blended. Remove from heat and add vanilla, marshmallows, and coconut. (I add coconut last to insure all the marshmallows are melted.) Cut the layers of cake in half. Stack the cake with the filling between each layer.
Icing:
1 c brown sugar
1 stick butter
¼ c heavy whipping cream
1 t vanilla
¼ c coco
1 ½ c powder sugar
Cook brown sugar, butter, and coco until smooth. Add whipping cream; cooking until boiling. Remove from heat. Add vanilla and powder sugar. (I typically add the powder sugar half a cup at a time to insure I get all the lumps out (or you could shift it before hand if you like)). You will have to beat it well to make the icing smooth. Ice cake and enjoy!

Yum! Sounds simple enough!
I really like the microplane cheese grater. It's so easy to use and make grating cheese super easy. I also like the new veggie peelers they have out now. Hmm...
